Pasta With Turkey Meatballs

Ingredients:

(4 SERVINGS)

12 ounces pasta (preferably whole-wheat)

8 ounces lean ground turkey

4 cloves garlic, finely chopped

1⁄4-cup onion, finely chopped

1⁄4-
cup parsley, chopped

1⁄2 tsp. oregano

1/4-cup extra-virgin olive oil, plus more for drizzling

1 large egg

Pinch of red pepper flakes

Salt and Freshly ground pepper

Grated ricotta or Parmesan cheese (optional)

 

Tomato sauce:

2 tbsp. virgin olive oil

2 cloves garlic, chopped

Sea salt and freshly ground black pepper

2 (32-ounce) cans crushed tomatoes or freshly chopped juicy tomatoes

1 tbsp. dried basil leaves

1 tbsp. dried parsley

½ tbsp. dried rosemary

½ tbsp. freshly chopped or dried thyme

Pinch of red pepper flakes

Salt and Freshly ground pepper

 

Directions:

To prepare the pasta with turkey meatballs, start off by making the sauce. In a saucepan, heat the olive oil and add all the fresh/dried aromatic herbs along with garlic and pepper flakes. Let the aroma come out without burning the herbs. Add the crushed tomatoes as soon as garlics turn golden. Simmer for 20-25 minutes and let the sauce become rich and thick. Season with salt and pepper, to taste, and continue with making meatballs.

In the meantime, blend the turkey, onion, garlic, egg, parsley, salt and red pepper flakes in a large bowl. Shape the mixture into meatballs and place them on a baking sheet. Roast the meatballs at 350 degrees C until they are brown in the outside. Pour the meatballs in the tomato sauce and simmer until it becomes a thick sauce. Let the meatballs be coated with the sauce so that all flavours are well combined.

In a large pot bring water to a boil and add salt to season the pasta while boiling. You can cook your favourite pasta, we chose the curly pasta. When cooked, drain the pasta and divide into the bowls or the favourite serving dishes. Add the meatball and sauce and grade some fresh Parmesan or ricotta for extra flavours. Garnish with dried oregano.
