Oven Roasted Lemon-Pepper Savory Whole Chicken With Vegetables

The chicken is one of the most favoured proteins in the world. A lot of people have their own recipes and even ways of preparing the chicken. Here is our favourite recipe that can be prepared by almost anyone.

1 whole chicken (about 2kg)

3 medium whole onions

10 cloves of garlic

5 tbsp. lemon-pepper spice

1 tbsp. fresh thyme

1 cinnamon stick

2 bay leaves

Sea salt, pepper

1 large zucchini

1 large carrot

1 large potato

1 tbsp. fresh thyme


Wash the chicken and dry it with a paper towel. You can choose to either keep the skin or remove it to make it a healthier choice.

Season the chicken with sea salt, pepper and lemon-pepper spice. Rub it on and inside the chicken.

Put 3-4 garlic cloves, the cinnamon stick, bay leaves and a whole onion in the stomach of the chicken. Put the chicken in a baking pan. Cut the remaining vegetables and pour them around the chicken and season with salt. Cover the whole thing with tin foil and make sure to make small holes for the steam to escape from underneath the thin foil.

Roast in a 350-degree oven for almost an hour until everything is cooked and chicken is golden brown. Every ten minutes pour the juice of chicken and vegetables onto the chicken; this way everything is evenly seasoned.

You can remove the tin foil for the last 15 minutes to get a crispy skin and a golden brown chicken.
